Open-Faced Peanut Butter & Banana + Blackberries: The Perfect College/Lazy Day Meal

This is the perfect college meal because it's healthy, it's fast and easy, you can make it in your dorm room, it fills you up, and is delicious. Even though I'm thankfully no longer living in a college dorm, sometimes, I just get tired (not to mention tired of thinking what to have for dinner). Saturday was one of those nights. I haven't had this in ages but it absolutely hit the spot.

Tips:
One: Use ripened bananas— the sweetness will complement the peanut butter really well. Think of the banana like jam. Also, cut the bananas as pictured. It makes a difference.

Two: Spread the peanut butter immediately after taking the bread out of the toaster. This is probably the most important part. See, peanut butter melts when it's warmed and tastes that much more amazing when it is. If you let the toast sit out for even a minute, it'll cool too much and the peanut butter won't melt. You want this open-faced sandwich to be creamy, sweet, and melt-in-your-mouth.

What's your favorite college or lazy-day meal? Share in the Comments below, we'd love to hear! :> xoxo
